Storage and Handling
Store in a cool, dry place protected from direct light. Katingos® indicates approximately 6 months of pantry storage and up to 8 months under refrigeration, recommending refrigeration when ambient temperatures exceed 30 °C. Refrigeration naturally produces a firmer consistency. Due to its high hazelnut content, natural oil separation may occur and does not by itself indicate spoilage; simply stir thoroughly to restore a homogeneous consistency.
Quality and Selection Criteria
The spread should have a homogeneous appearance, characteristic brown color and clean hazelnut-and-cacao aroma, without rancid, fermented or abnormal flavors and odors.
