We are delighted to have met the tea masters of Shizuoka, Japan, where this remarkable matcha is produced. The region is renowned for matcha with a sweet, smooth, umami profile.
Shade growing boosts chlorophyll and amino acids in the leaves, enhancing flavor and aroma. After harvest, the leaves are steamed to stop oxidation and keep them fresh, then dried and de-stemmed/de-veined. Finally, they are stone-milled into the fine, bright powder known as matcha.
