Pink Pine Nuts | In-Shell | Zacatecas | Pack 500GR

Originating from Zacatecas, Mexico. They are presented in their natural state, retaining the hard outer shell that protects the edible kernel and helps preserve its quality. Pine nuts are a traditional forest product from Central and Northern Mexico, valued for their distinctive flavor, firm texture and pleasantly rich profile once shelled.

Organoleptic Properties

Oval to slightly elongated seeds protected by a hard brown, reddish to pinkish-brown shell. Once opened, the edible kernel ranges from creamy white to ivory, with a firm and slightly crisp texture when raw. Flavor is delicate, subtly sweet and rich, with characteristic nutty, woody and mild pine-resin notes that become more pronounced after gentle roasting.

Suggested Uses

The outer shell must be cracked and removed before consumption. Kernels can be eaten raw or lightly toasted as a snack and incorporated into moles, sauces, fillings, salads, rice dishes, pasta, meat and vegetable preparations. They are also particularly suitable for bakery and confectionery applications, including breads, cookies, cakes, traditional sweets, chocolates and nut mixes. Gentle roasting enhances aroma and flavor; excessive temperatures or prolonged roasting should be avoided to prevent scorching the naturally occurring oils.

Format

Bulk Sale by Kilogram, whole pink pine nuts with shell, subject to natural variations in size, tone and shape.

Storage and Handling

Store in a cool, dry and dark place away from direct heat, keeping the package properly sealed. The shell provides natural protection to the kernel; however, excessive moisture should be avoided to prevent deterioration. Once shelled, pine nuts become more susceptible to oxidation because of their natural oil content. Shelled kernels should therefore be kept in an airtight container and refrigerated when they will not be consumed within a short period.

Quality and Selection Criteria

Select whole, dry and well-developed pine nuts with firm, intact shells, free from perforations, abnormal moisture, mold, infestation or rancid odors. Once opened, the kernel should display a light coloration, firm texture and clean characteristic aroma. Natural variations in shell color and dimensions are not considered defects by themselves.

Origin

Mexico.

Pine nuts are the edible seeds produced by certain species of the genus Pinus. In Mexico, their harvesting has a long tradition throughout the arid and mountainous regions of the central and northern parts of the country, including Zacatecas. Since several Mexican pine species produce edible seeds that may be regionally marketed as pine nuts, and the commercial term “pink pine nut” does not by itself identify a botanical species, no specific Pinus species is assigned without confirmed information on the forest origin of the lot. Marketing the product in shell preserves the seed's natural protective layer until consumption.
