Hulled pumpkin seeds, CAT. AA, originating from China and commercially identified as Shine Skin Pumpkin Kernel AA. The outer seed coat is removed from selected pumpkin seeds, exposing the characteristic green kernel. The AA grade is intended to provide good commercial uniformity, cleanliness and appearance, making the product suitable for direct consumption as well as industrial, culinary and bakery applications.
Organoleptic Properties
Flat, oval kernels of relatively uniform size, displaying shades from olive green to dark green with a smooth surface. With the outer hull removed, the kernels have a naturally firm and slightly crisp texture that becomes more pronounced after roasting. Flavor is mild, naturally oily and subtly sweet, with characteristic nutty and seed-like notes; roasting develops a deeper and more aromatic profile.
Suggested Uses
Ideal for direct consumption, either raw or roasted, as well as for nut and seed mixes, granola, cereals, snack bars, oatmeal, yogurt and bowls. Widely used in baking for breads, cookies, muffins and toppings. It can also be incorporated into salads, soups, rice dishes, vegetables and gourmet preparations. Kernels may be ground to produce seed pastes, pumpkin-seed butter, sauces and dressings or used as raw material for roasted, seasoned and coated snack products.

Storage and Handling
Store in a cool, dry, dark and well-ventilated place, keeping the package properly sealed and protected from moisture, heat, direct sunlight and strong odors. Because pumpkin kernels naturally contain oils, prolonged exposure to heat, oxygen and light may accelerate oxidation and rancidity. Controlled temperatures and appropriate inventory rotation are recommended for extended storage.
Quality and Selection Criteria
Select clean, dry and well-developed kernels displaying their characteristic green coloration with good uniformity in size and appearance. AA grade should provide consistent commercial selection while minimizing damaged, discolored or broken kernels and residual hull material. Product should retain a fresh aroma and characteristic flavor without rancidity, abnormal moisture, infestation, mold or foreign material.
