Purple Garlic | Size #07 | Siete Luminarias® | Argentina | BLK

The purple garlic (Allium sativum L.) is a commercial garlic type recognized for its attractive violet pigmentation, large bulbs and excellent culinary qualities. Grown in Argentina and marketed under the Siete Luminarias® brand, it is distinguished by its well-developed heads, fleshy cloves and characteristic aroma, making it particularly suitable for traditional cooking and professional foodservice applications.

Argentine purple garlic is part of an important horticultural tradition, particularly associated with the garlic-growing regions of Mendoza. Its natural coloration results from plant pigments known as anthocyanins, giving it a distinctive appearance compared with other commercial garlic types.

Organoleptic Properties

Large, round to slightly flattened bulbs protected by several layers of dry white skins with violet streaks or coloration. Individual cloves may have purple or light-brown protective skins, depending on cultivar and growing conditions. The inner flesh is white to creamy-white, firm, compact and juicy.

When raw, purple garlic develops a penetrating aroma and pronounced, slightly pungent, lingering flavor. During cooking, its profile becomes milder, sweeter, roasted and subtly caramelized. Its characteristic aroma develops primarily when the cloves are cut, crushed or minced, encouraging the formation of sulfur-containing compounds such as allicin.

Suggested Uses

An essential ingredient for sautés, stews, adobos, marinades, sauces, stocks, meat, poultry, fish, seafood and roasted vegetables. Its large bulb size makes peeling and preparation convenient, particularly for restaurants, industrial kitchens and foodservice operations.

Suitable for preparing garlic confit, roasted garlic, garlic butter, aioli, chimichurri, pesto, aromatic oils and garlic pastes. When roasted whole, the cloves develop a smooth, spreadable consistency and a sweeter, more delicate flavor. It pairs especially well with olive oil, parsley, rosemary, thyme, lemon, chili peppers and various spices.

Format

Bulk (BLK) per kilogram. Fresh cured purple garlic, Siete Luminarias® brand, classified as size #07.

According to Argentine commercial garlic standards, size 7 corresponds to bulbs measuring 66–75 mm in transverse diameter, a large commercial size. This classification refers to bulb diameter rather than the number of cloves per head.

Storage and Handling

Store in a cool, dry, dark place with moderate ventilation, protected from direct sunlight, excessive humidity and condensation. For extended commercial storage, properly cured garlic may be maintained near 0 °C (32 °F) under controlled humidity and ventilation conditions, preventing surface moisture accumulation.

Avoid storing in unventilated airtight plastic bags, as trapped moisture may encourage mold development. Prevent conditions that accelerate sprouting and deterioration. Once peeled or chopped, keep refrigerated and use promptly. Homemade garlic-in-oil preparations require strict refrigerated handling because improper storage may present microbiological risks.

Quality and Selection Criteria

Select bulbs that are large, firm, compact, well formed and properly cured, with intact cloves and dry, well-adhered protective skins. The violet coloration of the bulb or clove skins is a natural characteristic and should not be considered a defect.

Avoid soft or wet bulbs, pronounced sprouting, excessive roots, decay, mold, deep mechanical injuries or abnormal odors. Commercial size should be reasonably uniform within the 66–75 mm range, subject to applicable sizing tolerances.

Season

In Argentina, commercial purple garlic harvest generally takes place between November and December, depending on cultivar, growing region and weather conditions. After harvesting, the bulbs undergo curing, sorting and grading, helping preserve their quality and extend commercial availability.

Origin

Argentina.

Garlic is one of humanity's oldest cultivated culinary ingredients, with thousands of years of history in Asian and Mediterranean cuisines before becoming established throughout the Americas. In Argentina, garlic production developed particular importance in Mendoza, a region recognized for specialized cultivation, varietal development and export production. One fascinating characteristic of purple garlic is that its distinctive coloration is entirely natural, resulting from anthocyanins found in the protective skins of bulbs and cloves. Research from INTA and CONICET shows that pigment intensity is influenced by genetics, temperature, agricultural practices and postharvest conditions. In the kitchen, garlic also undergoes a remarkable aromatic transformation: raw garlic is pungent and intense, while slowly cooked garlic becomes mellow, sweet and deeply flavorful. This culinary versatility, combined with its impressive bulb size and attractive coloration, makes purple garlic an excellent choice for both everyday cooking and professional gastronomy.
