1. When is the official season?


If you are looking for fresh pine nuts, just brought down from the mountains, your time is Winter.

Nature dictates that the pine cones mature and open with the cold. Therefore, the harvest generally begins around October or November and, depending on the climate, can extend until January or February. It is the quintessential winter ingredient.


2. Not every year is a feast


Here is the fact that few people know: The stone pine tree does not yield an abundant crop every year.

Unlike annual crops, the pink pine nut has very marked cycles of abundance. Growers know that a massive harvest (known as a "mast year") happens only every 3, 5, or even 7 years.

In the intermediate years, production is low or non-existent. This explains why, in certain seasons, the pink pine nut becomes a scarce and exclusive treasure.


3. Three years of patience
