American cucumber (Cucumis sativus) grown in Sinaloa, Mexico, and marketed under the Tricar® brand. Also commercially known as a slicer cucumber, it is characterized by its elongated cylindrical shape, dark-green skin and light-colored, firm and refreshing flesh. It is one of the most widely used cucumber types for fresh consumption, salads and foodservice due to its good yield, crisp texture and mild flavor.

Organoleptic Properties

Elongated and relatively uniform fruit with firm medium to dark-green skin that may display small natural bumps. Pale green to greenish-white flesh with a firm, crisp and high-moisture texture. Light, fresh vegetal aroma. Mild, clean and refreshing flavor with subtle vegetal notes and a slight perception of natural sweetness.

Suggested Uses

Ideal for fresh consumption, salads, crudités, sandwiches, wraps, burgers, bowls, ceviche, aguachile and garnishes. Also suitable for quick pickling, fresh beverages, green juices, cocktails and applications in hotels, restaurants, catering, buffets and foodservice.

Bulk (BLK) per kilogram. Whole cucumbers selected for size, firmness, color, freshness and integrity.

Storage and Handling

Preferably store between 10 and 12 °C with approximately 90–95% relative humidity. Avoid prolonged storage below 10 °C, as cucumbers are susceptible to chilling injury. Extended exposure to high ethylene-producing commodities should also be avoided to preserve quality.

Quality and Selection Criteria

Fresh, firm and properly developed cucumbers with a relatively straight and uniform shape, characteristic green skin and good turgidity. Flesh should remain firm and crisp. Free from decay, soft areas, severe dehydration, excessive yellowing, deep wounds or significant mechanical damage.

American cucumbers belong to the commercial cucumber group commonly known as slicers, primarily intended for fresh consumption and recognized for their elongated shape, dark-green skin and firm, crisp flesh. Compared with European or English cucumbers, which are generally longer, slimmer and smoother-skinned, American slicers typically have a more robust structure and slightly thicker skin, characteristics that support handling and distribution. Sinaloa is one of Mexico's leading horticultural regions and an important cucumber-producing area supplying both domestic and export markets.
