Storage and Handling

Yellow prickly pear is a natural source of vitamin C, dietary fiber and antioxidant compounds such as betalains and flavonoids. It also provides potassium and magnesium, while its high water content makes it an exceptionally refreshing fruit. Zacatecas accounts for more than 30% of Mexico's prickly pear production, where semi-arid growing conditions promote high soluble solids (°Brix) and outstanding fresh-market quality.
