Organoleptic Properties
Medium-to-large clusters composed of large, oval to slightly elongated berries ranging from light green to yellowish-green. The translucent flesh is firm, fleshy and notably crisp, with good juiciness and no developed seeds. Flavor is sweet, clean and refreshing, with a relatively neutral profile and mild acidity that balances its sweetness.
Suggested Uses
Ideal for fresh consumption, snacking, lunch boxes, fruit platters, salads, bowls, yogurt, oatmeal and foodservice. Its large berry size and attractive appearance make it particularly suitable for hotels, catering, buffets and premium fruit displays. Storage and Handling
Store at approximately 0–1 °C (32–34 °F) and 90–95% relative humidity, maintaining a consistent cold chain. Avoid condensation, excessive free moisture and dehydration. Handle clusters carefully to minimize berry shatter and mechanical damage. Keep refrigerated until shortly before consumption to preserve their characteristic crisp texture.
Quality and Selection Criteria
Fresh, clean and well-developed clusters with large, firm berries securely attached to their stems. Desirable fruit displays a light-green to yellowish-green color, crisp flesh and a good balance between sweetness and acidity. A light natural whitish waxy coating (bloom) on the berries is normal and may indicate careful handling. Reject clusters showing soft, shriveled, split or fermented berries, decay, mold or excessive berry shatter.

Autumn King was developed by the USDA-ARS table grape breeding program in California and commercially released in 2006. It was selected as a late-ripening green seedless grape with large, firm berries capable of extending the commercial season beyond earlier green varieties. Its combination of large berry size, crisp texture, sweetness and late harvest has made Autumn King an important cultivar within California's San Joaquin Valley table-grape industry.
