Organoleptic Properties
Round to slightly conical fruit, medium to large within its commercial size category. Smooth, glossy skin with a yellow-cream background partially covered by red striping and blush ranging to deep red. Cream to pale-yellow flesh with a firm, fine, crisp and juicy texture. Predominantly sweet, mild and aromatic flavor, with moderate to low acidity and delicate floral and honey-like notes.
Suggested Uses
Excellent for fresh consumption as a snack, lunch-box fruit, fruit platter ingredient, salad component, bowl topping, yogurt or oatmeal accompaniment. Also suitable for bakery applications, tarts, muffins, breads, compotes, purées, juices and smoothies. Its attractive coloration and sweet flavor make it particularly suitable for retail, hotels, cafés, catering and foodservice.

Storage and Handling
For commercial storage, maintain approximately 0–1 °C (32–34 °F) at 90–95% relative humidity, with adequate air circulation and a stable cold chain. Gala has good commercial storage potential; WSU reports storage capability of up to 10 months under appropriate conditions. Quality and Selection Criteria
Whole, firm, clean and well-developed fruit with good size uniformity and characteristic Royal Gala coloration. Flesh should remain firm, crisp and juicy, without mealiness or signs of internal deterioration.
