Organoleptic Properties
Round to slightly conical fruit with smooth, glossy skin. Yellow to creamy-yellow background partially covered by orange-red to deep-red coloration, frequently appearing as distinctive stripes. Cream to pale-yellow flesh with a firm, fine, crisp and juicy texture. Delicate and pleasant fruity aroma. Predominantly sweet, fresh and aromatic flavor with subtle honey-like and floral notes complemented by mild acidity.
Suggested Uses
Excellent for fresh consumption, snacking, lunch boxes, fruit platters, salads, breakfast applications, yogurt, oatmeal, bowls and pairings with cheese and nuts. Also suitable for bakery, tarts, muffins, compotes, purées, juices, smoothies and applications in hotels, restaurants, catering, buffets and foodservice.

CTN-BX carton with an approximate weight of ±18 Kg, commercial size #100's. The size designation represents approximately 100 apples per carton, depending on the final net-weight and packing specifications of the commercial program.
Storage and Handling
For commercial storage, preferably maintain between 0 and 1 °C with approximately 90–95% relative humidity. Maintain a consistent cold chain to preserve firmness, juiciness and crisp texture. Avoid significant temperature fluctuations and excessive handling that may result in bruising or surface damage.
Quality and Selection Criteria
Whole, fresh, firm and properly formed apples with relatively uniform sizing and characteristic Royal Gala coloration. Skin should remain intact and free from decay, open wounds, severe bruising or significant dehydration. Flesh should remain firm, crisp and juicy, without mealiness, internal browning or fermented flavors.

Gala originated in New Zealand from a cross between Kidd's Orange Red and Golden Delicious made by breeder J. H. Kidd. Subsequent selections displaying more intense red coloration led to commercial types widely known as Royal Gala. Its combination of high natural sweetness, delicate aroma, crisp texture and attractive bicolored appearance helped establish Gala and its selections among the world's most commercially important apples. Washington State provides particularly favorable growing conditions, with sunny days and cool nights supporting color development, sugar accumulation and fruit firmness.
