The Russet Norkotah was developed at North Dakota State University as an improvement over the traditional Russet Burbank, offering a more uniform appearance, smoother skin and earlier maturity. Idaho's volcanic soils, dry climate and abundant Rocky Mountain snowmelt irrigation create ideal growing conditions for producing potatoes with high dry matter content, excellent texture and superior culinary performance. These qualities have made Russet Norkotah one of the most popular premium varieties for the fresh market and professional kitchens.
