Sweet Sapphire™, variety IFG® Six (Vitis vinifera), grown in California and marketed under Vista Vineyards®. This distinctive black seedless table grape is immediately recognizable for its exceptionally elongated, tubular berries and characteristic dimple at the tip. Its unusual appearance is complemented by a remarkably crisp texture, good sweetness and excellent fresh-eating quality.
Organoleptic Properties
Medium-to-large clusters bearing long, narrow and tubular berries that are considerably more elongated than conventional table grapes. The skin develops from deep purple to an intense black coloration and may display a natural whitish waxy bloom. Flesh is firm, fleshy, exceptionally crisp and juicy, without developed seeds. Flavor is sweet, clean and well balanced, with a pleasant neutral profile, typically reaching its optimum expression at approximately 18–20 °Brix.
Suggested Uses
Ideal for fresh consumption and premium snacking. Its unusual berry shape makes it particularly attractive for fruit and cheese boards, buffets, hotels, catering, events and gourmet presentations. It can also be incorporated into salads, bowls, yogurt, chilled desserts, bakery applications, beverages and cocktails or used as an edible garnish.
Format
Foam Box (FOM-BX) containing approximately 8.6 Kg (19 lb). Black seedless table grapes packed for the fresh market under Vista Vineyards®.
Storage and Handling
Store at approximately 0–1 °C (32–34 °F) and 90–95% relative humidity, maintaining a consistent cold chain. Avoid condensation and free moisture on the berries. Handle clusters carefully to minimize berry shatter and mechanical damage. Keeping the fruit refrigerated until shortly before consumption helps preserve its characteristic firm, crisp texture.
Quality and Selection Criteria
Select fresh, well-developed clusters with large, firm, elongated berries securely attached to their stems. Desirable fruit displays uniform deep-purple to black coloration, crisp texture and good soluble-solids development. The characteristic dimple or indentation at the distal end is a natural varietal feature of Sweet Sapphire™ and should not be considered a defect. The whitish surface bloom is also a natural protective wax. Reject soft, shriveled, split or fermented berries and fruit showing decay, mold or severe dehydration.
Origin
California, USA.
Sweet Sapphire™ (IFG® Six) was developed in California by International Fruit Genetics (IFG) through conventional table-grape breeding. It originated from a Beita Mouni × USDA C22-121 cross made in 2004 and was selected in 2006 near Delano, California. Its defining characteristic is its exceptional berry morphology: very elongated, tubular fruit ending in a distinctive dimple, combined with black coloration, crisp texture and desirable sweetness. These characteristics have made Sweet Sapphire™ one of the most visually distinctive black seedless grapes in the premium fresh-fruit market.
