Organoleptic Properties

Storage and Handling
Due to their naturally high unsaturated fat content, store in a cool, dry place protected from light and heat. Once opened, keep tightly sealed and preferably refrigerated to minimize oxidation of the natural oils and preserve flavor.
Quality and Selection Criteria
Clean, dry and intact kernels with an ivory-white to cream coloration, fresh aroma and characteristic flavor. Free from rancidity, moisture, mold, insects, shell residues and foreign material. Category 2 may present greater natural variation in size, coloration or proportion of pieces compared with higher grades without compromising product safety.
